So apparently all this "stay at home mom, living in what feels like a small city" thing is getting to me. I suddenly got this overwhelming urge to can! Everywhere I looked another friend was making jams or jellies and I though "if they could do that so could I" and I did. A few weeks ago our
produce co-op had a 10lb box of Roma tomato's for $11.00 and I decided it was now or never. With the help of Sean's Nana (I couldn't have done it without her) we blanched, peeled, diced, blended and simmered our way to 8 qt size jars of the best tomato sauce EVER! I had decided that I really didn't want to do jams and jellies but wanted to be able to make all the staples that we cant live without. My next attempt will be chicken stock but that seems more intimating then tomato sauce.

It was really good...each jar made two meals for my family. We have used it for Enchilada sauce, spaghetti sauce and pizza marinara. Sean has told me that I have officially "screwed myself" and will have to continue making homemade sauce for our pantry....aw man...what was I thinking?
